As the name suggested, Szechuan Steamboat (as known as hot pot) was originated from Sichuan Province which is known for its appetite for numbing and spicy food. Hot pot is one of the most social of dining formats. Not only you are gathered at one table sharing a meal, but you're cooking your food together in a shared pot. You get a big pot of boiling broth with two tastes, a bunch of fun things to cook in it, and an assortment of things to make your own dipping sauce. Sichuan food is really about a variety of flavors: spicy, flowery (Sichuan peppercorns), salty, sour, sweet, bitter, smoky combined with selections of fresh ingredients such as lamb, beef, prawn, salmon, snapper, tuna, chicken, vegetables and many more. The result is a cuisine with an incredible depth and complexity of flavor, hitting all sense receptors in your mouth, nose, and gastrointestinal system at the same time.
